Bar manager Fabio Fritolli has created the perfect cocktail to complement a cheeseboard. The Keeper’s Bridge includes amontillado sherry which pairs beautifully with the Tunworth, comte and Berkswell on the board. Try it!
The Keeper’s Bridge
Plymouth gin 40ml
dry vermouth 10ml (Fabio uses Riserva Carlo Alberto)
pineapple syrup 5ml
Angostura bitters – a dash
Stir all the ingredient over ice then strain into a coupe with a twist of orange peel.

Lillet blanc 25ml
pink peppercorn syrup 25ml
crème de cacao blanc 5ml
Shake all ingredients together and serve in a chilled martini glass. Decorate with a dry lemon slice if you like.
