Cumin lamb fillet with cauliflower crush

Ingredients
- 1 tsp ground cumin
- 1 clove garlic, crushed
- a pinch chilli powder or flakes
- 1 piece lamb fillet, trimmed of fat
- 1 cauliflower, cut into florets
- butter
Method
- STEP 1
Mix the cumin, garlic and chilli and rub all over the lamb.
- STEP 2
Cook the cauliflower in simmering water until it is tender and drain very well. Crush roughly with a knob of butter and season well.
- STEP 3
Meanwhile heat a little oil in a frying pan and cook the lamb on all sides until it is browned and feels firm to the touch. Leave for a couple of minutes then slice and serve on the cauliflower with any juices poured over.
