Chocolate banana loaf

Ingredients
- 100g raisins or sultanas
- 75ml whisky
- 150g plain flour
- 25g cocoa powder
- 100g chocolate chips
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 125g butter, melted
- 150g golden caster sugar
- 2 eggs
- 4 ripe (300g without skins) small bananas, mashed
Method
- STEP 1
Preheat oven to 170c/fan 150c/gas 3. Grease and line a 900g (2lb) loaf tin.
- STEP 2
Put the raisins and whisky in a small saucepan and bring to the boil. Remove from the heat, cover and leave for 1 hour until the raisins plump up.
- STEP 3
Put the flour, cocoa, chocolate chips, baking powder, bicarb, and salt in a bowl and combine with a wooden spoon.
- STEP 4
In a large bowl, mix the melted butter with the sugar and beat until blended. Beat in the eggs one at a time, then the bananas. Stir in the raisins. Add the chocolate and flour mix, a third at a time, stirring well each time. Spoon into the loaf tin and level off.
- STEP 5
Bake in the middle of the oven for 1¼ hours. Leave in the tin on a rack to cool, then turn out.
