Ingredients

  • for frying oil
  • 500g stewing steak, cut into small pieces
  • 2 large onions, chopped
  • 2 cloves garlic, crushed
  • 300ml chicken stock
  • ½ tsp hot smoked paprika
  • 2 tsp oregano
  • 2 tsp ground cumin
  • 1½ tbsp medium chilli powder
  • 2 tbsp tomato purée
  • 2 tsp brown sugar
  • to serve soured cream or grated cheddar or lime wedges or tortilla chips

Method

  • STEP 1

    Heat a tbsp oil in a pan then season the meat and brown all over in a pan. Add the onion, garlic and chicken stock, cover and simmer for 1 hour.

  • STEP 2

    Add the paprika, oregano, cumin, chilli powder, tomato purée, and sugar. Stir then simmer for another hour or until the meat is very tender and the sauce thickened. Serve the chilli in bowls with the accompaniments.
