This banana and pecan loaf is a great healthy choice for breakfast if you need to grab something on the run. Made with wholemeal flour, it will keep your energy levels up until lunchtime

Ingredients

  • lemon 1, mixed with 1 tbsp golden caster sugar to finish (optional)
  • butter 75g, softened
  • golden caster sugar 110g
  • plain flour 125g
  • wholemeal flour 100g
  • baking powder 2 tsp
  • eggs 2
  • ripe bananas 4, mashed
  • pecans 50g, each snapped in half

Method

  • Step 1

    Heat the oven to 180c/fan 160c/gas 4. Beat the butter, sugar, flours, baking powder, eggs and banana together.

  • Step 2

    Stir in the nuts and spoon into a lined and buttered 450g loaf tin.

  • Step 3

    Bake for 50 minutes or until a skewer comes out clean. Spoon over the lemon sugar, if using.
