Lemon drizzle crumpets

We've taken these crumpets and given them a zingy makeover. Drenched in lemon and sugar they are great with your afternoon tea



  • crumpets 6
  • caster sugar 50
  • lemon 1 large, juiced
  • greek yogurt 200g
  • lemon curd 4 tbsp


  • Step 1

    Heat the grill to high and toast the crumpets on both sides until crisp.

  • Step 2

    In a bowl, whisk the sugar and lemon juice. Sit the crumpets on a wire rack over a tray and then spoon the lemon syrup over the tops.

  • Step 3

    Leave the crumpets to sit for a few minutes so the sugary topping can crisp up.

  • Step 4

    To serve, stack three crumpets per plate like you’re serving pancakes.

  • Step 5

    Drizzle any lemony syrup caught in the tray over the plate, then dollop half the greek yogurt on top of each along with a few tablespoons of lemon curd.
