This recipe for banana breakfast muffins is so delicious that they feel like a treat, but they're each under 200 calories. Make a batch now and you'll have breakfast all week.

Ingredients

  • self-raising flour 250g
  • baking powder 1 tsp
  • bicarbonate of soda ½ tsp
  • light brown muscovado sugar 100g
  • bananas 2 large or 3 small, mashed
  • eggs 2
  • buttermilk 125ml
  • butter 75g melted
  • oats 3 tbsp

Method

  • Step 1

    Line a 12-hole muffin tin and heat the oven to 190c/fan 170c/gas 5. Sift the dry ingredients into a bowl. Mix the bananas, eggs, buttermilk and butter, then add to the dry mix with a pinch of salt. Fold it together lightly and quickly. Don’t worry if the mixture looks lumpy – keep going until it is smooth and your muffins will be tough. Spoon into the muffin cases and sprinkle on oats. Bake for 20 minutes, then cool on a wire rack.
