Apple and mint sorbet

Ingredients
- 2 tbsp sugar
- a small bunch mint
- 6-8 apples, quartered and juiced to make 850ml
- ½ lemon, juiced
Method
- STEP 1
Put the sugar in a small pan with 150ml water. Heat until the sugar has dissolved then add the mint. Leave to infuse for 20 minutes. Strain and add to the apple and lemon juice.
- STEP 2
Pour into an ice-cream maker and churn to a sorbet consistency.
