Red quinoa, feta and spinach salad

This tempting quinoa salad is high in protein, making it a great lunch to avoid a mid-afternoon sugar crash. It also makes a healthy and filling dinner.

Ingredients

  • red quinoa 200g, or ordinary quinoa if you can't find any in health food shops
  • olive oil
  • red wine vinegar 2 tbsp
  • garlic 1 clove, crushed
  • ground cumin 2 tsp
  • feta 200g block, crumbled
  • cucumber ½, chopped
  • spinach 150g, roughly chopped
  • spring onions 4, shredded

Method

  • Step 1

    Cook the quinoa according to pack instructions. Drain well then toss with 2tbsp oil, vinegar, garlic and cumin while still warm and season. Toss through the rest of the ingredients and serve.
